There are all kinds of things you can make with pork fat like confit, sausage, candles and even soap! Fudge is just another great option that relies on high-quality ingredients such as our pork fat compared to pre-packaged lard and other alternatives.
Check out this full recipe that serves 8-10 people, takes under 30 minutes to make and an additional 2 hours to chill!
Ingredients:
1 cup rendered pork fat (start with ~3 cups of pork fat pieces to yield 1 cup)
½ cup honey
½ cup cocoa powder
1 tbsp ghee or butter
Maldon sea salt (or other flaky salt)
Instructions:
1. Render and Melt: In a saucepan over low heat, add the pork fat and ghee (or butter). Stir constantly as the fat melts, removing any solid pieces
2. Add Honey: Once the fat has melted, pour and stir in the honey, blending well
3. Incorporate Cocoa: Add the cocoa powder, stirring until the mixture is smooth and fully combined.
4. Pour and Chill: Line a dish with unbleached parchment paper, pour the fudge mixture in, and sprinkle with Maldon sea salt. Chill in the refrigerator for 1-2 hours or until set
5.Serve: Slice into squares and enjoy your nutrient-dense fudge
